Seared 'sashimi grade' tuna loin with olive, green bean and shallot salad

Toasted fregola cooked as a risotto with Hervey Bay scallops and puffed pork

Salt baked ocean trout rillette with horseradish, shaved fennel and witlof

Thinly sliced roast veal with capers, red radish and tuna mayonnaise

Slow roasted pork belly with pear purée, fennel and salsa verde

Lightly cured salmon 'pastrami' with orange, baby beets, chives and olive oil
